Today's Beef
Lean cuts of beef stack up favorably against the "gold standard" of healthy meal entrees: the chicken breast. Surprisingly, a 3-ounce serving of beef eye round (trimmed, after cooking) has 140 calories, 4 grams fat, 2 grams saturated fat and 60 milligrams cholesterol. That compares favorably to the same serving size of roasted, skinless chicken breast, which comes in at 120 calories, 2 grams fat, 1 gram saturated fat and 70 milligrams cholesterol.
Advanced feeding and management practices and a greater understanding of genetics have created leaner cattle. Today's beef has 27% less trimmable fat than just 10 years ago. And because of initiatives by retailers and processors, more than 40% of all beef cuts have no external fat at all.
A nutrient-dense food, beef is also known as a good source of essential nutrients like
protein, iron, zinc and important B-vitamins. Health organizations like The American
Dietetic Association and the American Heart Association agree than lean beef, when
selected and prepared properly, fits into a healthy diet.
